First, I'd like to express how impressed I was with your swift response …, and how quickly you prepared the samples - all within a week’s time. Furthermore, you not only provided samples that were outstanding in quality (not always done the first time out), but you far exceeded our expectations by making nine different samples, when we only requested and expected five."

Feedback on the cutting I conducted in my home follows;

  • All nine products were sized correctly, and were consistent as well.
  • Visually, they appeared nicely shaped and all had that homemade look with the proper color.
  • Importantly, they all cooked up properly and were very tasty - showing they were seasoned nicely with the right "heat" level, the texture substantial with ingredient integrity, and the mouth feel was appealing.
  • They all stayed crisp and moist after cooking - which is also an essential result.

Standouts were the Potsticker, SW Chili Tarts, Pot Pie, Spring Roll and the Empanada (that dough is incredibly tasty and flakey), although the others were very good and acceptable.

I like the puff pastry you use, and the phillo dough as well, as they brown up evenly in a home oven.
